So I should have taken a picture but we were hungry and ate it all up before I knew it. Backing up… I’ve decided to try and eat, as well as make, more soup. I hope to try my hand at baking more bread but the bread part has to wait until more of my dissertation is done. So the creations that turn out good I hope to share with you, and here’s the first. Eat it.
Left Over BBQ Soup
3/4-1 C cut up pieces of leftover BBQ (I used the meat from 2 ribs)
2 small potatoes (or 1 large one)
1/2 TBS butter
1/2 C milk
1/2 tsp minced garlic
1/2 C peas (or any other veggie you have and like)
1 can double strength broth
1 can water
1 tsp chopped green onions
1 TBS BBQ sauce (I just scooped it from the container our left overs were in)
6 strips of bacon for crumbling on top
-boil potatos, drain and set a side
-heat butter, garlic and milk
-add potatos and mash
-add broth, water, green onions, peas, and meat stir well
-simmer 15 minutes (or until heated through to your liking)
-crumble a bit of bacon on each surving
I didn’t need to add any salt or pepper but of course be sure to check that the flavor is up to your liking. Easy peezy.
Serves 2-4
(It made 4 bowls, the music maker and I were satisfied with the soup and a couple slices of bread for dinner and we tend to eat decent sized dinners)
