As you’re running around needing to get things done this week here’s a quick satisfying recipe to get you through. It’s great if you still need a contribution to a family get together but can be scaled down or eaten over days for quick easy meals in between errands. The measurements are for those of you who don’t do the bit of this bit of that type of cooking but if you just want a small portion I’d use a half cup to one cup of pasta and add as much as the other stuff as sounds yummy to you.
1/4 lb Hard salami (sliced then cut in thin slices
1/2 C Marinated artichokes cut up small with some juice (you can add more if you want)
1/4-1/2 C Feta cheese
1small bag of pasta (I really like it with small bows)
couple shakes of garlic salt
1 TBS Olive Oil
1/4 C pine nuts toasted
Boil pasta until soft.
Toast pine nuts, set aside.
Pan fry salami, chopped artichokes, garlic salt, olive oil and a splash of juice for the artichoke jar.
Drain pasta, throw it in the pan, fry a bit to get rid of excess moisture.
Place mixture in serving dish (with room to stir). Let cool (just so it’s not pipping hot)
Stir in feta.
Taste salt if needed.
Stir in pine nuts just before serving. (Or top with pine nuts if it’ll be buffet style)
This fills a large casserole dish.
I’ve had success freezing the extras and taking some to school for a light lunch.
Eat It.
