This chicken will be my best friend this week as I finish up all the Halloween costumes (except for the rush orders and the ones for Tira and Lanna). I plan to buy one and make it work for me all week, that and a big box of salad from costco as well, it’s like 3$ for really great greens, seriously you can’t beat that.
Monday: Chicken Quarters with Mashed Potatoes and Gravy, maybe some non-salad veg
Tuesday: Curry Coconut Lentil Soup (maybe feeding the fam) I’ll use half a breast
Wednesday: Chinese Chicken Salad, use the other breast
Thursday: Pizza (probably throw the wings onto the pizza with other randoms from the freezer)
Friday: Sour Cream Chicken empanadas, use the other half of the breast
Saturday: eat out, everything should be in the mail
Sunday: Campanelli
You think I can stretch the chicken that far? What other rotisserie chicken ideas do you guys have for me if I wanna nix one of those or for future chicken weeks?

you can always grab a breast and chop it up into nice little square, grab some salad, fresh cilantro, tomotoe chunks, and fresh sliced avocados and have a mexican inspired salad.
