I came up with cheater lasagna soup recipe as an addition to a Game day food spread.We aren’t big sports fans in my house, but we do enjoy what I like to call “Football Food“. Ever since I was little we’d always have a Big Game party complete with buffalo chicken dip, the best guacamole and chili cheese pigs in a blanket.
And while I’d happily eat all appetizers sometimes you want something just a little heartier you know?!
Don’t be fooled though this simple soup recipe is not just for parties. We make this all the time. It is so easy and just the best comfort food.
Why We Love this Lasagna Soup
- It is crazy easy. You can have the crock pot do all the work for you and come home to a delicious soup or if you’re in a rush, the Instant pot makes getting dinner on the table fast!
- It has all the flavors of classic lasagna with like 1% of the work lol.
- It’s delicious and healthier than a regular lasagna. You get all the amazing flavors and comfort of your favorite Italian dish but in soup form its much lighter. Pair it with a simple balsamic salad and it’s pretty healthy!
If you do want it for game day here few quick and easy game day food ideas that are little to no prep perfect for keeping you glued to the game or so you don’t have to miss that commercial everyone will be talking about!
I have to admit I really like the commercial watching and seeing what shenanigans will occur during half time part of the big game lol. But of course my favorite part is the eating of delicious foods.
I really like to have options at parties but I have a problem with lots of people RSVP-ing yes to my parties and then about 50% of them actually showing up.
Only for my last party more than RSVP-ed showed up so now I’m even more confused on how much food to prep. My solution is to have party food that 1) can be made quickly and last minute depending on how many people show up and 2) can be frozen and still will be yummy for the future.
One of the best things I’ve found for this is doctoring up pre-made food.
My latest semi-homemade creation is my Lasagna Crock Pot Soup Recipe.
My sister made a lasagna soup that was SO amazing I’ve been thinking about it for months. The only thing is that it had loads of ingredients and I just had a feeling the work was unnecessary.
So armed with a Stouffers frozen lasagna from Walmart I decided to try and see if I could make a low maintenance crock pot version.
It turned out great, total comfort food but with a twist. Not only that but it’s totally freezable so I’ve got a couple of big containers waiting for when the baby comes.
Crock Pot Lasagna Soup Recipe
- 1 Frozen Stouffers Party Lasagna
- 7-9 C Chicken Broth
- Italian Seasoning and Garlic Salt to taste
- Shredded mozzarella for topping (optional)
- Leave lasagna to thaw enough to be cut with a knife. I put mine in the fridge the night before. It was definitely still frozen when I pulled it out of the fridge but cut-able. As long as it’s not frozen solid you’re good to go. Cut into 1 inch slices and place in crock pot.
- Cover with chicken broth. I used 9 cups of water and 7 bouillon cubes (my cubes each make 1 C broth).
- Cook on high for 3 hours or until heated through.
- Season with Italian seasoning and garlic salt to taste. Top with a sprinkling of shredded mozzarella if desired.
So yummy. This is definitely a recipe I’ll be keeping in rotation and on hand for parties.
Instant Pot Lasagna Soup Directions
Can you make this in the electric pressure cooker? YES absolutely and it will save you tons of time.
First add the broth to your instant pot. Next add the lasagna on top. Do not stir. This is very important you want the thin liquid to be on the bottom.
Pressure cook on high for 10 minutes. Allow for at least a 5 minute NPR. Still and add extra cheese if desired.

What to Server With Lasagna Soup
If you’re having this yummy soup for dinner we love to have it with these rolls but we’ve also made this cheater bread and its so good together! This pizza salad would be so yummy with it and you’ll get your veggies in too.
If you’re having this as a part of game day you can go crazy with appetizers. Chips and dip are my favorite. This spinach artichoke dip is by far my most requested recipe but these homemade refried beans served with chips are a close second!
Another thing I like to do for easy party food is to have a pizza station. When I’m up to it I LOVE making homemade pizza but honestly frozen pizzas are great for this.
My husband likes supreme but I don’t do olives or peppers so I like to pre cut slices and have them out so that people can remove toppings they don’t want or add others to fancy it up. In the past I’ve put out various yummy cheeses, pear (it’s good trust me), mushrooms, cooked chicken, BBQ sauce, you get the point.
But the idea is that people can adjust the pizza to their pallet and also cook it when they are ready so it can be nice and fresh for the eating.
For dessert I tend to keep this easy and mini. My favorite are these easy chocolate covered strawberries because after all the rich salty foods it’s nice to have some fruit. But these magic cookie pies are also a big hit!
