Banana Oatmeal Bread Ingredients
Sugar – ¾ cup. You will want to use granulated sugar for this recipe. Powdered sugar would make it too creamy and brown sugar would add an undesired molasses taste.
Butter – ½ cup softened. One stick salted butter helps bind everything together and keep the bread nice, soft and delicious!
Mashed bananas – 1 cup. You will want to make sure you mash the bananas up until they are pretty smooth so that you don’t have big chunks in your mixture.
Greek Yogurt – ½ cup. Greek yogurt adds a great depth of flavor to this bread. I usually use 2% but have also use full fat and no fat Greek yogurt. Plus it give a little more protein than a normal sour cream banana bread.
Eggs – 2 large eggs. If you keep other sizes on hand it won’t make enough of a difference. No need to go out and buy large just for this recipe.
All purpose flour – 1 ½ cup. You don’t have to sift the flour first but it won’t hurt if you decide to sift anyway.
Oats (old fashioned rolled oats)- ¾ cup. Quaker oats is a popular brand and it’s the brand that I prefer to use, but you can use whatever brand you like.
Baking soda – 1 tsp. Baking soda is important to make your bread light and fluffy.
Salt – ¼ tsp if you use unsalted butter take this up to ½ tsp
Cinnamon Chips – ½ C These are the key to taking this recipe over the top. Yes you can leave them out or swap them with a different kind of chip if you can’t find them but the flavor just ads an amazing level of specialness. I hope you’ll try it with the cinnamon chips. I have found them at Walmart, on Amazon, at my local grocery store, and Target but sometimes it’s a seasonal product. You can get the Hershey’s cinnamon chips from their website. I don’t think it makes a difference sometimes they are called cinnamon morsels.
Butterscotch chips – ¼ cup. This is where you can make the recipe your own by deciding what kind of chips to use. I think the combo of cinnamon + butterscotch is really the BEST combo but you can definitely play with this. Feel free to play with proportions too. Equal parts cinnamon chips and butterscotch chips is one of our favs.
Chocolate Chips – ¼ C (optional) I love chocolate chips in my banana bread but the boys don’t so if you want to be like me add in some chocolate chips. Sometimes I’ll put them in half the loaf and jut use 1/8 C. But truly it’s delicious even without the chocolate!
Substitutions and Modifications
Greek Yogurt – if you prefer you can definitely use sour cream instead of Greek Yogurt. I do like the extra protein you get in Greek yogurt but the swamp won’t hurt the texture or taste one bit.
Protein Flour – in my attempt to make breakfasts more filling for my carb lover I played around with using this protein boosted flour mix instead of all purpose flour and it worked great. No one could tell the difference.
Leave the Chips Out – don’t feel like chips? You can absolutely leave it out. It will still be delicious.
Swap the Chips – don’t like chocolate, butterscotch or cinnamon chips? No problem make it your own. I have used peanut butter chips and man that was good and even white chocolate chips!
Tools Needed to Bake Banana Oatmeal Bread
Let’s go over some of the tools you will need or that will make the baking process easier.
Bread pan – The bread pan is a necessity for this recipe. It will shape your banana oatmeal bread into a loaf.
I prefer using glass bread pans. I’ve used metal before but I use the glass ones to make baked Mac and cheese and shepherd’s pie so they get more use and have definitely earned their space in my cabinet.
I use this 1.5 quart pan and the recipe fills it perfectly. If you want to make these into muffins it will make about 24 muffins.
Mixing bowl – If you use a standing mixer, you can use the bowl that comes with it. If you are using a hand mixer, a deep mixing bowl will do. You will want to make sure it’s deep enough to continually add ingredients as the recipe calls.
Silicon spatula – I prefer a silicone spatula over a metal one because it forms to the bowl as you scrape it to get all of the contents out and into the bread pan.
Mixer – Sometimes I use my trusty hand mixer and sometimes I use my KitchenAid stand mixer.
How to Make Banana Oatmeal Bread
It won’t take you long at all to get this delicious banana oatmeal bread recipe put together and ready for baking. Baking the bread is what will take you the longest but it’s worth the wait!
Step 1: Preheat the oven to 350F. Set the oven to preheat while you start making the bread.
Step 2: Cream the sugar and butter. This is where you’re standing mixer or your hand mixer will come into play. You’ll put the butter and the sugar both in the bowl and mix them together with the mixer until they’re evenly blended.
Step 3: Mix in the banana, sour cream, eggs, flour, oats, baking soda and salt. Mix everything in little bit by little bit as the mixer is still turning. If you mix it in too fast, some of the ingredients could splash out. You will continue to mix it all together until it is evenly blended.
Step 4: Stir in the chips if you are using them. If you are using the chips, you will slowly dump them in as the mixer continues to mix.
Step 5: Pour into the baking dish and bake until a toothpick comes out clean, about 60-80 minutes. If the toothpick comes out still very gooey, then you know it’s safe to leave it in for another 15 minutes without checking. If it comes out almost clean, you will want to check it every 5 minutes or so to see if it’s done.
How to Store Oat Banana Bread
I prefer to leave my banana bread in the bread pan and slice pieces out of there until we are done. I just add a layer of press and seal wrap to the top and re-press it every time we get a slice out.
The banana bread lasts for about a week on the counter. If you want it to last longer you can put it in the refrigerator.
I highly recommended microwaving the bread for 10-30 seconds (depending on how cold it is) to make the bread slightly warm and to soften up the chips. Plus it will help any butter you spread on it to melt. Oh man soooo good.
Can You Freeze Oatmeal Banana Bread
Yes. You can absolutely store banana bread in the freezer. This is a great idea if you’re making a big batch after trying to put too brown bananas to good use. If you know you’re going to freeze the banana bread just wrap it in paper towels then foil then plastic.
Alternatively you can make these into muffins and that way only pull out what you want when you’re ready to eat it. This is perfect for having a variety for school lunches but not having the kids eat banana bread all week long.
