Funfetti cookies are great for just about any special occasion. Stick to the traditional rainbow cookies or change up the sprinkles to adapt them for any holiday or party theme.
These Cookes are inspired by the famous Gideons Bake House cookies at Disney Springs so they are extra big but you can definitely make smaller cookies with this recipe! The buttery tastes and bright sprinkles make these sugar cookies with sprinkles so easy to love!

There are a lot of things we love about this sprinkle cookie recipe.
This rainbow cookie recipe is delicious! The buttery texture and sweet contrast from the chips make these a favorite for our tastebuds.
In addition to being really yummy, these are easy to change up. You can add in ingredients that sound good to you to customize the flavor. Or swap out the sprinkles change the rainbow sprinkle cookies into fun Christmas sprinkle cookies (or really any theme you want). There are so many awesome sprinkles nowadays, so you can totally justify buying them!

Rainbow Cookie Ingredients
- butter – unsalted and softened (or use salted butter and leave the salt out below)
- brown sugar
- granulated white sugar
- large egg
- vanilla extract
- all purpose flour
- salt
- baking powder
- funfetti white chocolate chips – can be swapped for white chocolate chips
- Colored sprinkles
Funfetti Chocolate Chips Substitutions
Funfetti white chocolate chips are such fun specialty chips but if you cannot find them you can definitely just swap them for white chocolate chips. You can even toss a tablespoon of sprinkles into the dough if you want want to add a little color.
If you want to change up the flavor feel free to swap the chips out for other flavors, traditional chocolate, peanut butter, or even cinnamon chips would be delicious. If you want nuts just add them in. I love adding pistachio to cookies. Really this is such a flexible recipe that you can swap and add just about any flavor you want.
Giant Cookies Recipe
This recipe is written to imitate the humongous cookies from Gideon Bakery. There’s something so fun about breaking a huge cookie in half. You don’t have to treat the whole cookie as one serving. We have fun cutting the cookie in slices and sharing.
If you prefer to have smaller single serving cookie that works too. Just form smaller balls when you make the actual cookie shapes. These will also cook faster so make sure to check them earlier than the full cook time for the giant sized rainbow cookies.
How to Make Rainbow Cookies
It is easy to make these simple funfetti cookies.
- Cream butter and sugar. Mix together the butter and both sugars until fluffy.
- Add wet ingredients. Beat in the egg and vanilla.
- Add dry ingredients. Add the flour, baking powder and salt. Reserve the chocolate chips.
- Mix. Mix until just everything is combined. The dough will be very crumbly.
- Add in chips. Stir in the chocolate chips. If you want to use other flavors, chips or sprinkles now is when you would add them in.
- Prep the dough. Divide the dough into 6 equal portions and form each portion into a ball. Just until it comes together. Press the sprinkles all over the top and sides of the cookies. For smaller cookies just portion the dough into more smaller balls.
- Chill dough. Refrigerate for at least 30 minutes.
- Prepare oven. Preheat the oven to 375 degrees while the dough chills.
- Bake. Bake the cookies for 18 minutes. If making smaller cookies start checking the dough at around the 8 minute mark.
- Cool. Let the cookies sit on the baking sheet for 5 minutes then transfer to a cooling rack.

One of my favorite things about cookies is that you can freeze them for later. Feel free to freeze baked cookies or the dough balls to use later. This is a great way for making a variety of cookies for Christmas cookie exchanges.

Funfetti Cookies Recipe
Ingredients
- ½ cup unsalted butter softened
