It’s been crazy busy around here. A lot of work and a lot of play so I’ve been opting for some of my faster dinner options.
This Catfish Taco is one of my favorites because it takes no time. I keep frozen catfish pieces on hand. I just defrost a couple and then pan fry them with a couple shakes of taco seasoning. Warm up tortillas, some canned corn and beans, smear a little greek yogurt (but I’ve also used blue cheese dressing in a pinch) and then sprinkle with cheese and avocado. Yummy, health, satisfying, but most importantly super quick to make.
Easy Catfish Tacos
Ingredients
- Catfish
- Taco Seasoning
- Tortillas
- Canned Corn
- Canned Beans
- Greek Yogurt
- Cheese
- Avocado
Instructions
