There is this bakery here a small chain that makes really addictive bread. After my friend Laurel gave me my first taste I spent 3 days trying get a hold of the bread.
Unfortunately they sell out quick so you have to be there at the right time uggg. And it’s not like the closest store is on my normal route.
Any ways after reading the ingredients list I saw that it included “cinnamon chips”. I never new there even existed such a thing. Fast forward to a couple weeks ago and I was in the market and saw cinnamon chips on sale.
Since I was on my bread making binge I knew it was just the right time to try it out. I think it came out pretty close. And it’s pretty yummy.
Great Harvest Cinnaburst Copycat Bread Recipe
This recipe is a bit involved for a newbie bread maker but it’s really not that tricky. And I promise it is so worth it. This stuff is delicious!
What You Need To Make a Cinnaburst Loaf
- 1 cup warm water
- 1 cup warm milk
- 1/3 cup sugar
- 2 1/4 teaspoon yeast (1 pack)
- 1/3 cup oil (I used veggie oil)
- 1/2 T salt
- 1 egg
- 4 1/2 to 5 1/2 cups all purpose flour
- 1 cup cinnamon chips
How to Make Great Harvest Cinnamon Bread
- In mixer combine yeast, sugar, and warm water and milk; let bubble for about 5 minutes.
- Add in oil and egg.
- Slowly add 2 cups flour, mix and then add salt.
- Add 1/2 cup flour at a time until it comes away from side of bowl. Add the cinnamon chips when it gets close to the right consistency. The dough will be very sticky but the softer the dough the lighter the bread. So use the least amount of flour you can handle.
- Let rise in mixing bowl for about 30 minutes.
- Form into loaf (or whatever shape you want).
- Let rise and additional 30 minutes.
- Bake at 350 degrees for 30-45 minutes.
Makes 2 loaves.

I found a recipe for home made cinnamon chips. I haven’t tried it yet:
3 tablespoons sugar
1 tablespoon ground cinnamon
2 teaspoons shortening (I would use butter instead)
2 teaspoons corn syrup
In a large bowl, combine the sugar, cinnamon, shortening and corn syrup with a fork until crumbly and evenly blended. Spread onto a foil-lined baking sheet.
Bake at 250 degrees F for 30-40 minutes or until melted and bubbly. Cool completely; break into small pieces.

If you live in Northern Utah, you can find the mini-cinnamon chips at Kitchen Kneads in Ogden. They are at 3030 Grant Avenue and carry SCADS of neat stuff! The chips run $3.29 a pound.

This recipe looks good, the only change I would suggest is using fresh ground whole flour. Recently going to our local grocery, they’ve installed a “mill” in the health food area which will grind the whole wheat berry. It is the use of the whole wheat berry that gives Great Harvest Bread it’s signature flavor. I would know… won’t post here how though ;)

I makde this bread 2 days ago and I must have done something wrong. I don’t know what because i followed the directions but it was very bland. I’ve never used yeast before so maybe i did something wrong there. It rose like it was supposed to and i added the chips and everything else. I may have to try again and see if maybe i just did something wrong. any help would be appreciated!!! I was so excited to make this and was disappointed when it was bland. I threw some cinnamon and sugar that i have premixed on a piece i warmed up and it tasted great then.

I used hershey’s cinnamon chips. i found them in my local walmart here in Tampa FL. maybe it was the chips? It smelled great while it was cooking. I also felt like my one did not cook properly. It may have been because did one non stick pan and one just metal and i used PAM so it wouldnt’ stick. First time making bread and using my Kitchenaid mixer for something besides cakes.

If this is the same bakery chain I’m thinking of, they also sell another loaf of bread that includes cinnamon chips – white chocolate cinnamon chip. It’s so yummy! Makes great French toast too! Do you happen to have a recipe for that too?

there are lots of different versions. I’ve seen cinnamon chips, nibs, bits. And I have found them for much less than that! They are are comparable to chocolate chips at my grocery store.
