My sister made some Chocolate Bacon Cookies months ago. She flaunted her deliciousness all over facebook, instagram, and twitter and she gave me exactly ONE. Cold hearted I tell you. So finally I whipped up a batch of my own with a few tweaks and I have to say they are delicious.
We are a bacon obsessed family but I don’t always like salty and sweet combos. The bacon popsicle that the rest of my relatives loved I thought was just okay, I’d rather have a side of bacon than it on top of my donut, and the bacon ice cream meh, but these cookies they just work. If they sound at all appealing to you I highly recommend you giving them a go. I’ll be taking a batch to a cookie exchange this weekend.
Double Chocolate Bacon Cookies
- 12 oz Bacon cooked and chopped
- 2 cups All Purpose Flour
- 2/3 cup Unsweetened Cocoa Powder
- 3/4 teaspoon Baking Soda
- 1 cup salted Butter
- 1-1/2 cups Sugar
- 2 Eggs
- 1-3/4 teaspoons Vanilla Extract
- 1 cup Chocolate Chips
Bring your butter to room temperature. Preheat the oven to 350 F. Cream Sugar and butter. Mix in the rest of the ingredients except for the bacon and chocolate chips. Once well combined add the bacon and chocolate chips and mix until evenly distributed. Roll into balls and press down gently. I made small balls and got about 4 dozen from the recipe. Bake 10-12 minutes until set. Enjoy.
