I’m not shy about my constant battle with getting more veggies in my body. It’s not that I don’t like veggies it’s just I never crave them and I forget that they are in my fridge. But spinach has been good to me lately. And this is one of my favorite ways to prepare it. Not only is it delicious but it’s super fast.
You want equal amounts of butter and olive oil. For two people I wouldn’t go more than 1/2 tsp of each to start with. In fact I’ve even done it with just spray oil and that works great. (I used too much oil in the pictures so don’t base it off of that).
Melt the butter and oil and then add 1/2 a tsp of chopped garlic until it starts to be fragrant.
Then add lots of spinach. It will cook down a ton and it’s an easy way to get a lot of veg into the meal. Using tongs or something similar move around and flip the spinach. Add salt and pepper to taste and a squeeze of fresh lemon. This step only takes a few minutes.
Serve it with your favorite protein and you’re good to go. I did mine with some rotisserie chicken and Trader Joe/s risotto and it was a super yummy and healthy dinner. I also like it a lot with salmon and cous cous. I hope you like it!
