I searched everywhere for a recipe like this. We adore the Rancho market version and looked for recipes to make something similar but I never had luck.
I’d call to see if it was in stock since the store isn’t on my normal route and it wasn’t on any sort of schedule so you just had to be lucky. I always have called it guac salsa but my mom called it guacamoleo before and I’ve heard it by so many different names.
Thankfully my sister found this recipe but with years and hours of searching that never showed up for me so I thought I would share it, along with a few of my twists and tricks myself.
Ingredients for Avocado Salsa Recipe
I keep all these ingredients on hand all the time. Fresh herbs don’t survive in my fridge so I have a tip for freezing what you need so you can make this in 5 minutes!
- Tomatillos – if you’ve never bought one of these they look like a green tomato with a paper husk on them. 3 medium sized tomatillos
- Onion – 2 TBS chopped
- Jalapeño – 1/2-2 depending on how spicy you like things
- Cilantro – 2 TBS chopped (about 1 ice cube or 6 sprigs)
- Avocado – 1 large or 2 small or medium
- Salt – I start with 1/2 tsp and then test. Depending on what you’re serving it with you may want to add more or less salt.
- Garlic Powder – I like about 1/4 tsp for this size recipe but definitely adjust it to your own tastes
- Water – 1/3 C water
You will need a blender. I looooooove my ninja I just use the smallest container, it works perfectly and wallet friendly.
How to Freeze Cilantro and Onions
I almost never use a whole bunch of cilantro. I feel like every recipe I use only ask for a few springs and then what? Well my trick is to now, wash off all the cilantro, blend it up and then scoop the bits into and ice cube tray. If your cilantro needs help add a splash of water to the blender but mind chopped it up beautifully! Yes I use the stem and the leaves.
I do something similar for my onions. I don’t use the blender for this. Just chop up an onion and then freeze it in a bag. Make sure to spread the bits as flat as you can and then scoop some out next time you need it.
How to Make Tomatillo Avocado Salsa
It is easy to make this yummy avocado sauce. You seriously just blend everything up together!
- Prep the tomatillos. Peel off the husk. Rinse and quarter. Stick in the blender.
- Chop onion. Or pull from the freezer like me and add it to the blender.
- Seed and and remove stem of jalapeño. Add it to the blender You can use a spicier pepper if you want more kick. The jalapeño gives good flavor and depending on the type sometimes more heat than other times. I like to start with half a jalapeño and and more if I want more heat. Usually 1 full one is right for my tastes buds.
- Add cilantro. Right into the blender.
- Add avocado. Discard the seed and scoop the avocado out of the skin and add the flesh to the blender.
- Add water, salt and garlic powder. And then blend it all up. Take a taste and see if you want more salt or pepper.
How to Store Avocado Sauce
This recipe makes 2 full cups of avocado salsa. One of my favorite things about this is that a little goes a long way and it keeps well. I’ve been making a batch every week sticking it the fridge in an air tight container and then eating it all week long.
Unlike regular guacamole this doesn’t get brown. I’m sure there’s some science to it but there’s no need to press on some plastic wrap like you’d do for guacamole this keeps perfectly in a regular glass or Tupperware covered bowl.
How to Eat Salsa Guacamole
My favorite is to eat this like a good old salsa. Chip and dip baby! Grab your favorite tortilla chip or I love plantain chips with it and it’s really the best. But here are some other great ideas for how to eat this yummy tomatillo avocado salsa!
- Top any Mexican dish with this. So good on creamy enchiladas, or taquitos, or tacos filled with delicious slow cooker meat.
- Use as a salad dressing. Yes it makes for the tastiest dressing and you really get that fresh flavor in every bite.
- Top it on a burger for an extra flavor boost.
- I love it on scrambled eggs with sausage or smoked salmon.
- Put it on a salsa or dips table at a party along side traditional guacamole, a tomato based salsa, or other yummy dips.
- Dip everything in it! Carrots, chips, potatoes, mini tacos, quesadillas. Really it’s good on everything.
- Drizzle the avocado sauce on your favorite fish. SO good on tilapia cooked with a sprinkling of garlic salt, or baked buttery salmon.
What other ideas do you have? Tell me. I really think this is one of the very best and most versatile sauces!

Do you think that this recipe can be prepared and then preserved for winter months?
Thanks!

I don’t know but I’d love to hear if you give it a try! I have frozen tomatillos and the other veggies aside from avocados and then after I thaw them blend it up (maybe with less water) and that work.
