Make this St. Patrick’s Day Snack Mix Recipe for a fun addition to your classic Shepherd’s Pie or Corned Beef and Cabbage feast or day of green! It’s so easy and perfect for your little (and big) Leprechauns.
We are big fans of Chex Mix (or actually Crispix mix). When you add some fun details like green sprinkles, candy pieces and of course gold coins, you get a perfectly festive snack! This snack mix will have your friends and family begging for more. I make a version of this for every family get together. Really it’s one of my most requested recipes and I rarely have any left after my family has their way with it!St. Patrick’s Day Snack Mix Recipe
This recipe stores great so you can make it up even a week ahead of time and have it ready to go. But if you’re family is anything like mine they may gobble it up before the 17th if they know it exists so you may want to hide it lol.St. Patrick’s Day Chex Mix Ingredients
- 4 cups Corn Chex or Crispix
- 2 cups Pretzels
- 3 cups Honey Teddy Grahams
- 1/2 cup cashew pieces (optional)
- Cooking Spray
- 3/4 cup firmly packed light brown sugar
- 6 TBS light corn syrup (Karos)
- 3 TBS butter
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 C Chocolate Gold Coins
- 1/2 C Green Chocolate Candies (I used mint m&m’s)
- St. Patrick’s Day Sprinkles (here are some from Amazon (affiliate link) but I found my at my local grocery store)
Directions for Make the Green Treat
- Preheat oven to 250 F
- Combine first 4 ingredient on a jelly roll pan (I like these because the lip keeps the stuff from falling off when you stir). I found it was easier too leave it mounded (not spread out) for the next step.
- Combine brown sugar, corn syrup, and butter in a small saucepan; cook over medium heat 2 minutes or until sugar and butter melt, stirring constantly. You don’t want to cook it so long that it thickens because then it’s harder to coat all the pieces. Remove from heat; stir in vanilla and salt. Immediately pour syrup mixture evenly over cereal mixture, tossing quickly to coat well.
- Bake at 250F for 1 hour, stirring every 15 minutes.
- Have your sprinkles open and ready when you pull the cookie sheet out as the mix cools fast. Sprinkle generously then spread warm snack mix in a single layer on wax paper to cool.
- Break cooled snack mix apart.
- When ready to serve or gift add in remaining ingredients.
- Store in an airtight container.

Crock Pot St. Patrick’s Snack Mix
If you want you you can easily make this yummy sweet snack mix in the slow cooker! To do that just melt the butter in the microwave and then add all the ingredients to your crock pot. Cover and cook on low for 3 hours making sure to stir every 45 minutes. After that spread the snack mix on wax paper or parchment paper and add sprinkles allow to cool completely before placing in an air tight container.Instant Pot St. Patrick’s Snack Mix Instructions
If you want to use your Instant Pot to make this it’s really easy. Whether you are remodeling your kitchen, camping or on vacation it can be handy to know how to make Instant Pot Chex mix. It’s actually super simple. Set your Instant Pot to sauté on the more temperature. Add the butter, sugar, corn syrup and salt. Bring to a boil stirring every once in a while. Allow to boil for 2 minutes and then hit cancel. Next stir in the vanilla. Add all the dry ingredients and turn back to sauté but make sure it is set to less. Cook on sauté less for 15 minutes constantly stirring. Hit cancel and poor the contents of the pot on parchment paper and add sprinkles to cool.St. Patrick's Day Snack Mix Recipe
