So while we didn’t have turkey for Christmas, I made my first turkey last week. I used one of those oven bags, it was done in 2.5 hours super moist and I received many compliments. It was so easy and yummy I recommend it. But making a turkey albeit the smallest (13? lbs) turkey I could find for a me and the music maker and a friend who was visiting gave us lots of leftovers. The music maker doesn’t really eat leftovers and I don’t like to eat the same thing over and over so here is my list of what has been (and can be) done with the turkey. Feel free to share your own brilliant uses for leftover turkey; I’d love to know what to do with the rest that I threw in the freezer just now.
1. Of course turkey cheese avocado toast
2. turkey omelet
3. turkey in ramen
4. crepe stack with a cheese spinach and turkey filling
5. turkey curry lentil soup
6. turkey quesadillas
And in the past I’ve done…
-turkey enchiladas
-threw turkey in casseroles in place of chicken
-left over thanksgiving pie (turkey and sides thrown in a pie crust)
-grilled cheese with turkey
-turkey tortilla soup

I also love green curry with turkey. I made it this year after Thanksgiving. yummmm….
